Le Kébi ist ein levantinisches Restaurant in Paris. Es bietet libanesisch inspirierte Kreationen an. An sieben von sieben Tagen in der Woche steht einem die levantinische Küche im Le Kébi durchgehend von Mittags bis Nachts um 23 Uhr zur Verfügung. Sowohl als Full Service Restaurant oder auch zum Mitnehmen können die gebotenen, levantinischen Köstlichkeiten genossen werden.

Die Levante umfasst verschiedene Länder, die auch als Morgenland oder Länder der aufgehenden Sonne (du Soleil Levant) bekannt sind. Zu dieser Region gehören Libanon, Israel, Palästina, Syrien, die Türkei, Ägypten und Zypern. Diese Länder sind die Heimat einer der gesündesten, bekömmlichsten und ältesten Küchen der Welt - der levantinischen Küche.

Die Levante-Küche ist vor allem für ihre Mezze bekannt. Gemischte Vorspeisen, die jedes Essen begleiten. Dazu gehören beliebte Dips und Salate wie Hummus, Baba Ganoush und Tabbouleh, aber auch weniger bekannte Gerichte wie Fadi (Zucchini mit Joghurt, Zitrone und Tahini) oder Pancar (Rote Bete mit Joghurt, Knoblauch und Pistazien).

Die typischen Zutaten der Levante-Küche sind Kichererbsen, Tahini, Schafskäse, Halloumi, Aubergine, Paprika, Zucchini, Oliven, Granatäpfel, Minze, Zitrone und Joghurt. Diese Hauptzutaten sind ideal für Vegetarier und Veganer. Darüber hinaus gibt es viele Gerichte mit Fisch und anderen Meeresfrüchten, aber auch Hühnchen oder Lamm.

Ein besonderes Festessen ist die langsam gebratene Lammschulter, die mit Gewürzen eingelegt und mit Granatäpfeln, Joghurt und Pistaziensauce serviert wird.

Auch interessant: Neuer Food-Trend ist die Süßkartoffel.

Die Gewürze der Levante-Küche sind zum Teil auch bei uns bekannt, wie Kreuzkümmel, Zimt, Kurkuma, Kümmel, Muskatnuss und Kardamom. Es gibt jedoch auch einzigartige Gewürze in der Levante wie Baharat, eine arabische Gewürzmischung, oder das intensiv säuerlich-fruchtige Aroma von Sumach, getrocknete rote Früchte des Färberbaums, die gerne als Streuwürze verwendet werden und besonders gut zu Gegrilltem passen. In der Levante-Küche sind auch aromatische Kräuter wie Minze, Petersilie und Koriander sehr beliebt und verfeinern fast jedes Gericht.
